Ed's girlfriend's name is Sarah Bastian. She's very pretty - slender figure and long brown hair. She was Ed's assistant on Cedar Rapids, and is an aspiring actress. She was in a movie called "Truth Never Lies". I haven't seen it, but watch the trailer on Youtube - it looks pretty good, and Sarah looks like she did a pretty good job.
